What's the best order to do everything? Main missions, collectables, etc.
I want the best/most efficient way to play so I can get good unlockables early as possible as well as doing missions in a certain order that would make cents story wise

You can do 12 levels of paramedic(+50% health), 12 levels of firefighter(immunity to fire), and 50 taxi fares(all taxis would have nitros) right at the game start even before arriving to your house. Or you can do it a bit later. Before starting any long sidemission like that eat something or you'll start losing fat and then health if too much time passes.

Vigilante(+50% armor) could also be done early in theory but it's too hard that way. I leave it for much later until getting battle helicopter(~70% of the game progress).

You can level up cycling skill very early, just find some bike(store it in your garage if you must) and use it instead of car all the time. You'll also get stamina incrase in the process.

Visit gym after it unlocks regularly and build musles and stamina. You need some fat to spend.

You can dive into any water and increase lung capacity but it's not required until late mission in San Fierro. Better combine it with searching for seashells collecibles.

I think there are no skippable missions in San Andreas and you can do them in any order. You can do Ryder missions earlier to get ability to do Burglary missions. Reaching $15K in them in total will get you infinite sprint.

As for collectibles:
Graffitis in Los Santos - you can do pretty early after one of the first missions where you're taught to do that. After finishing them all you'll get several weapons spawn in your house.
Photos in San Fierro - realistically after second city unlocks. Doing all of them will spawn some weapons near your SF's base location.
Horseshoes in Las Venturas - realistically after the last city unlocks. You need a helicopter or jetpack to get some of them. Will also spawn some weapons near your LV's base.
Seashells - you can get some in Los Santos right away in the beginning. Realistically finding them all can be done after all islands unlock. The reward is your girlfriends won't be picky to you anymore.

There are some driving schools. The first one will unlock during later San Fierro missions. Reaching bronze/silver/gold in all challenges will spawn 1, 2, or 3 cars/boats/bikes near them. And will increase proficiency of your driving of course.
