The original one requires extensive modding anyway... The remaster works fine as is, but you can do some modding as well to improve it further. At the end of the day, the DE modded is a better and more stable experience than the original modded.
Here some good modding guide

Telling someone that a game is better with mods invalidates that the game is good at all.
This game is buggy, will randomly crash from time to time, and visually is unpleasant. While the original release of the game might look dated now, I can complete the entire game without crashing once, or watching some model/materials/shaders glitch.
Would I buy this game? No, but it was gifted to me so I'll play it.
Second, the DE vanilla is not any more buggy than GTA SA vanilla.
Third, GTA SA, although works on modern machines, it needs a lot more modding for a modern experience and controls, while DE brings a ton of quality of life improvements,
Forth, You can still have a decent experience playing the DE vanilla while the original you absolutely requite mods. Don't even try to convince anyone otherwise.
Fifth, with a little modding, the DE is a better experience than GTA SA original with a ♥♥♥♥ ton of mods.
Sixth, You're just angry because the DE is not the remastered we want. I get it.. it should have been so much better. But playing the original is not the better option.
But hey.. OP asks if it's worth it. It's ok you think it's not.. I think it is. With all issues, at the end of the day, the DE still the best way to revisit the game on modern computers.
I played this games way back in my childhood but I never get to finish any of them. So I'm just wondering if it's worth revisiting it with this release or I should just stick with the originals since I can also get them in Rockstar Store/website.
With no mods, which is the better experience?
And thats not even counting how you can mod the original PC version to look like the PS2 version.
Even Rockstar agrees since the only reason the original is not on Steam, is because then they wouldnt be able to get any sales from the Definitive Downgrade Edition
The thing is, the original PC version was an awful port to begin with.. even back in 2005. It was completely busted and the lighting and intend visuals of the PS2 was completely missing on the PC release and never added. So modding is mandatory. The original PC version is just as buggy or worse than the DE.
However, if you're looking for the authentic experience, then neither. You can get the PS2 version running on emulator. It runs great and you can get it to look really nice with higher 4k resolution and AA. Then you don't need any modding and all the songs are included, obviously.
So just get the PS2 version and run it on emulator. That's the intended original version of this game.
Look how wrong the PC version looks compared to the PS2 version

A lot of GTA SA fans only played the game when it came out on PC without knowing how utterly broke that was and still is. It's so flat.
So if you really wanna go PC vanilla, I think DE is better than the original.
"""Definitive""" is much worse than the original version, even without mods. Especially since its an even more downgraded Mobile port.
But thats also ignoring how easy it is to mod the old Steam version. So while PS2 used to be much better by default, with a tiny bit of modding you can get the Original Steam version to have those effects added back.

*But I kinda agree what V I D A L said with some points too. I tried pirating the originals to compare the experience but it reminded me how terrible the mouse + keyboard controls was with the originals and they don't have native controller support albeit outdated.
So yeah convenience wise, and as out of the box especially with native controller support, the definitive is the way. but like my test ^ It's performance is really poor.
It remains a product of it's time.
So DE at least if you have the hardware to push it, it can ran native 60fps without breaking the game logic.
Like I said, you can try the original PS2 version on emulation.. that is the most authentic version after all.. the one and only developed by Rockstar themselves.. all other versions are third party ports.
Obviously that one is also locked at 30fps.
Yeah I'm trying the PS2 emulation atm. Works perfectly natively but there are still some issues when tinkering the graphics to make it look pretty.
It's manageable but there's no workaround for 30 fps tho. Apparently 60 fps patches breaks some mechanics of the game.
