When the Hangar 13 guys actually made a whole new game, Rockstar just sold the same one from some mediocre outsourcers who couldn't think of anything better than adding these ugly mods that made the game worse than it was 20 years ago. But it costs 60 damn bucks.

This was never meant to be a remake.
The rain video you post has long being patched and doesn't look like that anymore.
Everything you are posting are of bugs and issues from release. The game came out a year ago and several patches came out since then.
Pricewise the comparison is not accurate - while the listing price for both DE trilogies is the same 60 bucks, GTA releases with 50% discount. Also, only Mafia 1 got the described treatment and its standalone price reflects that as it is more expensive than the other two. GTA DE games have no standalone prices at all on the other hand. So it is a bit of a mess to compare, But the comparison of different approaches is still valid. If the GTA DE games got the same level of love, they would need to sell at atleast 30 bucks each... but it would be a pleasure to pay that for actually improved great classics...

Op complains about outdated gameplay in PS2 games. These games are probably older than op.

This is very clearly a cynical ripoff.

Mafia 1 was honestly too short, you can get everything done inside 10 hours, you can do some car collecting if you want after this, but it doesn't add anything. Kinda wished Mafia 1 was a bit longer. However even the DE version is missing some content.
Mafia 2 felt like a cross between midtown madness 2, driver and some elements of GTA VC. That stated, having Robert Costanzo as Joe Barbero was a nice touch, i liked that. it didn't help that Mafia 2 had a lot of content pulled before its release and the DE version didn't improve on that all.
Mafia 3 is more like GTA SA and when i started playing it, i got that vibe right away. gangs, guns, money, drugs, a central african american character pushing through waves of general resistance, racists, the main antagonist Sal Mercano that has Lincoln Clay on the short end of their problems like Frank Tenpenny in SA. Cars, explosions, police interference and of course the storylines play a part, the music stations, all of it.
SA has Cesar Vialpando, a Mexican gang leader turned exile and future brother-in-law to CJ, he becomes quite friendly with CJ towards the end. Mafia 3 has Donovan, a CIA operative who wades through all the muck to get to what he wants at the end, but is already a friend of Lincoln's which makes things easier throughout.
