Dont go fast around corners, brake early when you arrive, plan your route wisely: You only get 3 guys, so drive the best route to catch them in packs of 3 and use shortcuts.
Time limit is easier than in GTA 3, so there is no need to rush.

The ambulance handles with more predictably/stability if you use the handbrake, not the normal brake. It's impossible to roll the ambulance in a sharp turn using the handbrake etc. You also rule out the risk of reversing over a patient, where if you hold the normal brake down for slightly too long, and thus start reversing, you can run them over as they try to climb in the rear doors.
I also find it easier with the siren off. Vehicles can sometimes move out of the way unpredictably with the siren on leading to more collisions. Vehicles moving out of the way due to the siren can also move onto the pavement/sidewalk and crush and kill your patient!
