Gluttony is pretty easy to push - you just one-shot the various bosses that drop food, at least at the start. When you learn some cooking, you can do that too, but at least in my experience it's not worth doing a lot of. (On runs where I bother to get cooking, I might do 3-6 levels of each food each DR.) There are some exceptions though - most obviously anchovy sandwiches, early in the game, and later dried fruit. Both can be critical to buffing your stats enough to beat hard enemies, so you'll sometimes find yourself doing that anyway. Some foods like butter, milk, fish, and olives can be easily automated with one action, so if you're doing a longer run (or just have to walk away for a while) you can eat a lot of those. Make sure you do enough to score the second auto-eat, and eventually the third one. You can only do that with a longer run with a bunch of DRs but you'll do that sometimes anyway.
Greed appears to be much more powerful, at least where I am in the game. Now that I've got fourth-level guardian allies with maxxed luck I'm getting >2M research per drop with my research-farming team. And I can use that team everywhere, even the fifth guardian, if I eat dried fruit for a half a day first. (Without that I'd need to sub in some stat boost allies.) So I can easily drop a million research per greed type in each DR, which in turn sends those numbers through the roof.
Be careful to use the pig man familiar when adding all your greed, it makes a big difference (and let familiars accumulate a little while before you do). And forge the Sage's Grimoire (and equip it!!!) as early as you can, as it provides a huge boost to the pig man familiar.
Anyway, greed and gluttony aren't just for SR/DR - they provide critical boosts to all sorts of things, so you want to use them in measured amounts each DR, not spending more than you can comfortably regenerate in your research farming. Greed gains after the first 20-30 levels are of fairly little value until you're able to spend a *lot* (you won't be there for a while), don't get too excited and dump all your research right away.
That said, especially for your first few reincarnations, Sin is scarce, so if you think pumping up greed/gluttony a little more will get you over the hump to one more sin, by all means go for it. You can always get more research.
