Side question, have you unlocked sin and all of the major upgrades that it gives? Might be a good time to take a break? This is a game that I personally have stopped playing for large chunks at a time (Usually at the end of major content bits so that sort of gated me.)
My late game goals were to use sin to get the required max of everything to do in the game so I dont ever have to switch my favorite party when I am trying to rush a reincarnation.
It is kind of fun to get strong enough to rush through a reincarnation in literally an hour and have some more sin to spend.
Especially ending 2 adds quite a bit of story to your normal run, so if you're bored you can simply go for it, it will also force you to beat the first 2 areas of the desert due the final boss being that strong. It will also give you 1000 max destiny, making quick ED1 runs for Sin quite a bit faster.
Though I guess many of the upgrade actions will stay pretty similar every run, even though they will often become way easier due to faster destiny gains or some resource regen or due to to stuff like the Sin upgrades which increase your instant and loop action efficiency reward or dungeon reward, so you get the needed resources quicker. And for the tedious stuff like making goddes statues or holy water you can simply use Sloth and then just wait.
Is it possible to leave Norn behind and still do ED1/2? Looking at the story map, I’m afraid if I leave her behind I would get locked into a bigger ending than I could manage.
and norn is only required for the 5th ending, every other ending makes norn optional
the only problem with wanting to leave norn behind is that you need around 2k destiny BEFORE leaving the village, to do that you need some blessing and destiny upgrades
after you can do that, fast reincarnations become possible (1 hour and a few min, so you can do one DR and try to get as many sins as possible)

the game is a slog at times and you WILL be grinding quite a bit, but if you set it up right, you can do so with minimal interaction
ed 2 storyline opens an interesting new mechanic iirc, that is something to look forward to
if you want to have minimal interaction with the game for some time, you can get an ending, dont reincarnate, just do a few DRs each day to get more inspiration, buy everything you can buy with inspiration, then push habit efficiency (stat up comes later)
at least that is what i did at a few points, i was still interestetd in the game but didnt want to constantly DO anything, so i only did some DRs each day and waited until i wanted to interact more with the game again
