First thing first, is it actually bound to the key you're trying to use?
Are you ADSing? It only works while you are ADSing.

OK ADSing means Aiming Down Sights. The GRIP only works while you have right mouse held to aim a firearm.
Also the gun shouldn't ready when you left mouse, it is defaulted to right mouse, I don't know if you can double bind melee and aim but the game would be totally nonfunctional if you did.
You need to be aiming with the gun continually. GRIP is functionally a mechanism of your gun. Also you need to make sure you have actually bound the function to the button you're trying to use, the tutorial prompts that come up on the bottom of the screen tend to be wrong if you have rebound stuff.
