FIRS industry replacement set adds new industries
There are over a dozen industry NewGRFs available. None of them are compatible with each other (this is an intentional design issue), and they will disable themselves if you try (also intentional). Each of them do some unique things, you'll need to try them all out for yourself to see which one you like.
Just remember that if you use a NewGRF industry set, you'll also need NewGRF vehicles to transport their cargoes.
Otherwise, every industry NewGRF supports passengers, and you can usually add these additional NewGRFs to give some variety for passenger production/acceptance:
1. Beach as Industry
2. Plaza as Industry
3. Housing as Industry
They create single-tile industries that accept and produce passengers. These can spawn on their own at gameplay, and you can fund your own anywhere you wish.
As for industry sets in general, there's many to try, and IMO none of them are bad. Most of them are pretty easy to use. FIRS is probably the most complex. Extreme Industry Set and Australian Industry Set are forks of FIRS (based on the same code) that do different things.
As a reminder, anytime you add a NewGRF industry set, you will also need NewGRF vehicles. Start with OpenGFX+ Trains and OpenGFX+ Road Vehicles. For ships you will probably like FISH 2. For aircraft start with Aviators Aircraft Set (AV8) and venture beyond that for more unique stuff.
Edit: playing multiplayer I noticed one server had high interest rates on loans which also made things harder. Some of these costs can be changed in the game settings and others require mods, I don't recall in detail.
OTTD is really a sandbox where you can set your own objectives. As Jakob said above, try increasing the landscaping costs, running costs and loan interests. A lot of custom NewGRF vehicle sets have adjustable purchase and running costs for vehicles to make using them easier or harder to use.
Also look at the game scripts which alter how the game works - For example, "Villages is Villages" makes it challenging to grow towns until certain transport needs are met, and it taxes you for having a lot of income and a huge network. :P
Alternatively, relax, stick on a podcast, and try and play an extended, long game - Start from either the 1700s or 1800s and maintain your company, upgrading its routes with new tech until 2100. Use one of the complex FIRS industry sets (In a Hot Country, Steeltown), complete industry chains, and grow towns while using a limiter script (like the "Villages" one above). See how far you get and how much the map grows.
