Can I play the old Assassin's Creed games on Windows 10?
For some reason I just discovered that I'm able to play the old AC games on PC (AC 1, 2, Brotherhood, Revelations).

However, I've upgraded to Windows 10, I have an Intel i7 processor, NVIDIA GTX 860m.

This is directly from Steam:

MINIMUM:
OS: Windows® XP (32-64 bits) /Windows Vista®(32-64 bits)/Windows 7® (32-64 bits) *
Processor: Intel Core® 2 Duo 1.8 GHZ or AMD Athlon X2 64 2.4GHZ

RECOMMENDED:
OS: Windows® XP (32-64 bits) /Windows Vista®(32-64 bits)/Windows 7® (32-64 bits) *
Processor: Intel Core® 2 Duo E6700 2.6 GHz or AMD Athlon 64 X2 6000+ or better

Am I still able to play these games on Windows 10?

Don't see any reason why not.
Should be able to run the game.
I was able to run AC 1 & 2 on Windows 8, so they should run fine on Windows 10. I have yet to do so myself, but be aware that the first game is prone to crashing. It would be nice if anyone could supply a fix for the crashing on the original game, which was the reason I gave up on it in the first place.
All the PC Assassins Creed work on Win8, 8.1, 10
Just ensure your Uplay Client is up to date.
If the games are in your Steam account, install from Steam.
If it is a new game purchase and that requires Uplay, first activate the games CDKEY given from Steam, into your Uplay account via the Uplay Client (make sure you login to the correct account on Uplay)

It worked totally fine for me in Windows 11. Initially I was getting some pretty big stutters every 15 seconds or so, but I realised it was due to the game trying to connect to old Ubisoft servers that have already been shut down. I don't know why Ubisoft hasn't fixed the issue yet, but we can bypass that by playing it without internet connection or editing the hosts file in sys32 (there is a guide for that in steam itself)
The only AC game I know of that had that issue was AC3
Yes you can, but since the Update auf Windows 11 and reinstall Windows 10,
I have Stuttering and freezes and no idea why :(
