Any point to keeping the Mayonnaise Bottle?
Or the various t-shirts with fake band names on them?

According to the wiki, they don't do anything. Some items, like the Birthday Card, say that they might be used later.

I am just worried I drop something needed in the future, but obviously don't want a bunch of junk in my chest slots.

Probably not - but Hunters have a skill that gives extra damage for each unique item that they pick up, so for the odd, useless items - you would want your hunters to drop them, pick them up - and then you can probably junk them.

^ which counts accountwide, as long it has been on floor and picked up by any char. So for Questrewards which goes directly into your bag or items from NPC Stores -> drop them and pick'em up
