Can we not change out the starting pistol?
I cant even replace it with a different pistol?

You have to use Data to unlock new pistol
Then click on it again to change it.

Just like TheSuit said, you can swap a starting pistol to another starting pistol by paying Data to unlock.
The starting pistols can't be dropped during a run, however.

Pistols are not replaceable as this was tested way back in S1 beta times and it simply cannot work. You will run out of ammo and lose the game and its a bad experience. We cannot increase all ammo to such a degree where 3 primary weapons (of which 1 or 2 might be low ammo weapons, such as an RPG) have enough ammo at any point, it would make things super imbalanced, so the pistol will always have to stay and provide basically infinite ammo, it guarantees that the game keeps working.

On that topic, is it possible to make a mod that gives all pistols infinite ammo? I understand it won't be in the base game but I'd like to have it that way myself.

They basically have infinite ammo right now, you need to really try to get them empty. But any ammo upgrade should easily make it basically infinite.
