BUT... with all that said, I STILL think FF7R is the better buy. The gameplay loop is a lot of fun, and the personalities of the characters shine in battle. The way you can customize the characters to your liking to fine tune the battle experience is something i very much appreciated. It feels very badass. The music and atmosphere of the game is something very special. I especially like the combat. The story is also great. A lot of people complained about the story only taking place in Midgar, which is like the first 10% of the original game... but they made it work. You'll see.
I thing both are fun games, but I gaurantee you that you'll enjoy FF7R far more.
What Eria said is nonsense since both 16 and 7R have the same kind of gameplay.

FF16 is fine, but it can be a major slog at times and the combat isn’t nearly as good as this games.
That said, this is far better than XVI.
XVI, you can probably just turn your brain off and run through. It isn't particularly difficult and the story is pretty basic and spells it all out for you. I guess sans the DLC that I didn't bother with, there was only one question that was somewhat ambiguous at the end. (Personally, I believe they not-so-subtly answered it right then and there in game.)
I really liked the demo of XVI, and then it took a pretty big hit to the level of quality immediately after that. Then after the next chapter or two (the Garuda fight), it straight nose dived. Most of the game felt worse than the part before it.
FFVII Remake, on the other hand, started strong, then had a pretty good ebb and flow. The pacing could be a bit lame at times, particularly if you are a completionist doing all the side content as you go, but it is a pretty satisfying journey, with part 2 (Rebirth) coming to Steam in about a month.
Part 2 is much, much bigger, with much more freedom to explore a large, open zone world.
If you really want a new gen FF go for 7 (16 is kinda bad)
If you want a real JRPG don't play any FF after 12.
There are much better JRPG which beat every single FF
Just know, even fans agree the side quests are not good and the padding can be a pain. You'll know what we mean once you start playing.
FF7Remake is also a good game with it's new gameplay mixed together with classic gameplay. Dialogues are good (mostly direct and pure).
Although every series of Final Fantasy has different stories.
You could start to play with FF15 too, if you like open-world style.
