& do they show visually?

Nope. Only weapon changes look, mainly only Cloud's is actually reasonably notable.

There are mods, however, that do this on NexusMods.

Rebirth will supposedly have costumes you can change, though.

Nope, but I would absolutely not be surprised if there is a mod of it.

The game only features the base outfits, except during a single event (the cross dressing segment for Don Corneo) which only temporarily grants different outfits for Cloud, Aerith, Tifa. Beyond that it is just the default outfits from the original game basically.

Cloud's is influenced by doing certain quests in that very same chapter / story segment in Wallmarket. Tifa & Aerith's are in their respective chapters where Chadley has a series of quests he offers. If you complete them all you can pick from three different outfits (no preview, only a title so Google before you pick if you want) which will appear during the Don Corneo segment plus completing all those quests also unlocks a bonus scene for Aerith / Tifa / Barrett in chapter 14 for whoever has the highest relationship stat.

Rebirth is noted to have different outfits you can equip though. We see in the Final Fantasy VII Rebirth Final Trailer a few of them such as Aerith & Tifa's swimsuits, etc. and them running around in them. Red XIII in a Shinra soldier outfit is pretty entertaining.

Mostly no. Barret has Ranged and Melee weapons that change how he fights, but that is it.
