The Yuffie DLC is another 5-10 hours on top of that.
Which fortunately can't be explained by a single sentence in a Youtube comment.
This one right here is 32 hours long. No idea if they rushed or not.
It does appear that the game on its own is very short. No way would I give 70 bucks for that. If it was a true re-make that held the entirety of what the original FF7 was. Oh yeah, I would have probably bought it.
There is also data out there by the publisher that 2 more parts are meant to be developed and put on sale.
I will be waiting for everything in a bundle. Plenty of other stuff to play.

To answer your question, 32 hours is basically not rushed but just the main story. It can add more onto it if you do extras but at 32 hours they basically skipped most non-mandatory story content.
DLC adds another 2-4 hours on top of that figure, depending on completion and speed.
Yes, they will add another 2 episodes. They will likely be longer considering the content being covered is larger than Midgar, plus they will be larger less linear environments and thus next-gen only.
They might get a group discount at some point but they'll likely not see a price for all 3 combined under $80, or even $100, for many years since they are full sized games similar to Trails of Cold Steel, Xenosaga, etc. I'd recommend looking, instead, at holiday sales and just picking it up individually if you want a good price. Episode 1, at least, does go on sale every now and then.
