Do you have to Exorcise enemies to get loot from them?
Like, if it's a map full of undead, do I have to keep one of them alive to get all the stuff from the others, with the one kept alive being forfeit?

If you do not exorcise them, you will not get their loot. The exception seems to be that if it is the last enemy killed, you will get its loot without needing to exorcise it because, obviously, you did not have the opportunity.

Interesting.

If any enemy happens to grab a bag off the ground and then, when being killed, turns into a Tarot card, do the items they grabbed just vanish into the aether?

Starfall 1 and 2
Heavenly Judgment 1 and 2

These 4 spells also cast exorcism so you can kill and exorcise undead in the same action with them.

Starfall 1 is purchasable from the Palace of the Dead storefront (soonest is floor 24). Recommended that you complete Heim first though so you can also buy rank 1 Summons. This rank 1 draconic spell is a better exorcism than rank 2 exorcism because you don't have to be a cleric to cast it.

The warren report has a section on this detailing exactly how the game handles loot in this situation.

In short, loot never gets lost in this situation. The enemy that collected the loot will also drop that loot + their own loot when they die. If they were going to drop a green card, then the green card is lost but the loot is never lost.

Issue being that you can only get those in PotD, and it would suck for 90% of the game.
What would actually suck is bringing a cleric to 90% of the game on the offchance it is needed vs invalidating an entire class by using up a single spell slot on some of your casters.

The game gives you an increasing amount of options for dealing with the undead. It's okay to have different enemies provide different kinds of threats.

The only time it really matters is Palace of the Dead because they can potentially drop good stuff there. Anywhere else before that, undead just drop vendor-bait.

1. Exorcism spell.
2. Items that can be bought infinitely on shop.

I don't see the problem, you can deal with undead fine doing 2 separate things and it makes undead interesting to fight especially when they are rather rare early game.

I do wish that the grimoire exorcisme had a slight range to it like the blessing stones, though. If the Belmonts in Castlevania can throw their holy water a little bit forward, let me do it too.

Honestly just a range of 1~3 base would be enough. It's just really annoying when a map has a ton of undead to the point where there's like 4 stilled enemy frontliners and I can't get to all of them with my cleric before they start coming back up, but I don't want to move my frontline past them or else they'll repop right in the midst of my backliners. Causes this awkward period where I have to just park my frontliners there (who are getting peppered by enemies) while I spend several turns mopping them up.
Could solve the problem by bringing multiple clerics, but I generally don't change people into clerics on account of them being a "one is enough" class for most of the game.

Later in the game you'll get way better options for exorcism.
One of the first ones you'll get is a craftable rod with 3 charges of rank 1 exorcism on it (the charges refresh after every battle, they don't permanently run out).

Starfall rank 1 and 2 (draconic light magic) is AoE dmg + exorcism
There's a relic one-hand sword with charges of exorcism rank 2 on it.

Sometimes it's even worth it to just let the undead guy rez at half hp so it can run closer to where your army has migrated before you one-shot it again.

Yeah but that's all late/post game stuff. Currently doing the Cressida fight on a new playthrough, and the first run was a disaster because I ran out of grimoires and had to sit around getting obliterated as my clerics struggled to juggle exorcism and healing.
