You could also try the Chargeblade. It's a bit "technical", but the gameplay has lots of variety and you still have a shield option.
But regarding your concerns over countering, you don't need to "know every move of the monster" to counter properly IMO. Particularly LS who has quite generous counter window.
And you can always use the talent Evade Extension to have an even greater parry window.
You can also play heavy/light bowgun. By using traps and CC, it's pretty fun to drop mass clusters on some helpless Rathalos. It's a bit ressource intensive though (Traps + all types of ammo to buy/craft).
I'd advise you to try the LS anyway. if it doesn't work, consider the following :
- Gunlance is safe and has explosions, a bit repetitive.
- Chargeblade is more technical, has more variety, still some counter.
- Bowguns are self explanatory.
I would recommend then against hammer/HuntingHorn/DualBlades/SwitchAxe/insectglaive etc because they have less defensive moves afaik, so it's relying more on knowing the monsters patterns etc.
But I gladly let other Hunters correct me on that last point. I never really dug in Hammer/HH etc.
Switch axe has burst counter in sunbreak, and in base game invincible gambit. Neither are necessary when you have a point or two of evade extender, which will give you all the mobility you need.
Try other weapons too, the important thing is that you like it and have fun!
I never got into Insect glaive in World, but I got hooked on it in Rise, even though on paper it's the opposite of what I like.
Bowguns, expecially light bowgun turn MH into point and click adventure game until you're half way though master rank :)
