every weapon is a blast and world by itself.
Hammer has good mobility too, but doesn't give you any options to block, which will help you learn to dodge. As you'll often be targeting the head where possible, you will learn to stand in the way of danger without taking hits.
Overall, I think Rise is very good at making all of the weapons approachable, the early monsters are quite forgiving to help you learn the flow of combat (especially useful if you're relatively new to the MH games). Undoubtedly, some are more complex than others, with the Charge Blade, Insect Glaive and Switch Axe being on the more complex end, however, you should just pick the weapon you think is most fun.
If you want to spice it up from there, you can go airplane-mode Gunlance or jack-of-all-trades Charge Blade. The Lance is a really solid foundational core for a new hunter!
Make sure to try everything out. Eventually something will just "click" for you and you'll love it!

Regarding OP's weaponry choice, don't be afraid to try out the various different weapons, you never know what might strike your fancy. Greatsword is a very satisfying weapon to use, for example, but it's pretty demanding in terms of knowing where to position yourself and when to time your attacks for maximum effect.
Just try out whatever you want in the game, and don't be afraid to use the training area for that, it's perhaps the best training area yet in the series.
Least beginner friendly weapons:
Charge Blade - Too complex to start with. Please don't start here.
Light\Heavy Bowgun - The combination of taking extra damage while using these weapons and the ammo system make them not beginner friendly.
Switch Axe - Not as complex as Charge Blade but still not something I would recommend to a beginner. This can be a great second weapon to learn.
Lance - This isn't overly complex but you need specific passive armor skills before this weapon start to feel right.
Gunlance - Same as lance but also has a little bit more base complexity.
Insect Glaive - This weapon is only moderately complex but it is very easy to very low damage with this weapon as a beginner - but you'll have fun doing that low damage!
Average beginner friendliness:
Horn - This weapon has been made much simpler in Rise. It's a slightly more complex hammer. Hit the monster on the head while applying buffs to yourself and allies.
Bow - This is the least complex ranged weapon. If you like the idea of ranged combat, start here.
Dual Blades - This weapon's move set isn't overly complex but it really shines with a lot of game knowledge. It has several consumable items that help it a lot and good knowledge of how elemental damage works helps too.
Sword and Shield - Once this was a very good beginner weapon but it's move set has been made just ever so slightly more complex over time that I would list it as average now.
Great beginner friendly weapons:
Greatsword and Hammer - These weapons are both great and simultaneously teaching you the weapon and how to interact with monsters. I think Hammer edges out Greatsword slightly in it's beginner friendliness but the difference is minor enough that if picking between these two go for the one you like the look of more.
Long Sword - This weapon is very easy to use and understand how it works at a basic level and you'll kill monsters quickly and efficiently only using this weapons most basic move set. But it also has a depth that is there waiting for you when you want to use it. It also doesn't hurt that this weapon is a little bit over tuned in Rise.
1) Greatsword
_- Hit and Run tactic, low risk option used since the first mh game
2) Light Bowgun
_- Costly materials, intensive ammo materials farming, combo books x5, all those problems do not exist in modern mh games anymore, cheers
3) Longsword
_- Lots of move with good invincible frame that also counter monster reliably
4) Sword & Shield
_- This weapon has a shield that comes out fast but get ignored by lots of people during real hunt
