So depends on how you feel you can:
a) leave him be and let him spread his weeds you can harvest and turn into yucky juice. He will eventually leave your farm in a week or so.
b) go to settings and turn off seasonal bosses, and that's what I did.
watch the rope to see if its going faster / slower, nothing more
in the corner of your eye wait for the white text to pop up and press jump
it'll then be consistent a bit and then speed up or slow down, which is the purpose of watching the rope
it's about limiting what you;re looking at and predicting, not reactions
At some point you just spam the jump key, first it was really icky but you can get into it
I'm trying to get the achievement but, oh well... I think I can try again when the next year comes.

Personally, I would be fine with multiple attempts, if that stupid cutscene won't trigger EVERY TIME. So I lost my patience quickly.

Thank you soo very much. I detest quicktime events, to the extent that if there was no other way around it I was going to uninstall the game.
I'm not sure what triggers the "get help to beat him" quest maybe losing 2 times against him you then can recruit the kids from the backer shop and with them you get a message when to jump which makes it doable.
The rewards are not all that great but you get him as a mini pet... Also it's almost kinda sweet.
The next boss I did not went after directly and then he was gone before I had a chance to beat him. (you also can deactive them completely if you like but you'll miss the quests and rewards)
3rd boss was more annoying and required some fishing skill to beat.
