Both are great games - I feel like Sun Haven caters much more to having 'more to do' while Stardew always felt like a 'completionist' game to me. Unlike the community center in stardew which is its driving force of the player doing things outside of repairs and mining, the museum in Sun Haven is completely optional.
As much as the story of Sun Haven isn't going to win any awards - there is at least a story to follow, I never felt that way when I was playing Stardew. On the flip, there are less overall 'secrets' and small interactions with individual characters in Sun Haven.
The actual farming aspect of sun haven is a bit more involved, and the combat in particular is leaps above Stardew (although nothing insane, just, actually feels like a top down style combat game ala Secret of Mana and those games)
I will say that the mods for Stardew are much more developed and add more content than Sun Haven will likely see anytime soon, simply due to the age of the game and its overall popularity.
I would say QOL in stardew is better in many ways, I'd consider it less grindy but it's a earlier game that is focused more on farming sims like Harvest Moon/Story of Seasons and Rune Factory. It feels like it has more secrets and like you actually help characters who have some depth. It's more focused on farming whereas Sun Haven is focused more on cooking and crafting. Sun Haven suffers from inventory management issues and doesn't have systems like My Time At Portia where you can go through one chest to access all of your stuff, nor does it offer harvest moon/story of season options where you can expand your inventory.
Sun haven has massive balancing problems but I think it will likely change as it goes on. Like there is literally no reason to use any other fertilizer then slime.
SDV will always be great and hold a special place with me, but right now I'm enjoying Sun Haven much more. When you play a farming sim without an energy bar, it's hard to go back to all the others with them.
I also enjoy the combat in this game, whereas I tend to dread it in SDV.
Having sunk almost 170 hours in Stardew and now about 190 i think in this I'd say yes it does. To a fault almost.
With 3 separate towns to explore, NPC's and romanceable in each (tho only 3 in each of the other two ones), 3 separate town currencies, 3 farms to use with unique layouts and corps for each, sheds, workshops, barns, coops, other specific of coop, unique barn animals from each region than can be placed and reared in any of the farms. A somewhat interesting if maybe slightly thin story arch. 3 separate mines with similar but marginally different mechanics. Crafting, crafting, AND MOAR CRAFTIN. A highly customization character option as well as pets galore, several mounts, honestly there's quite a bit I am forgetting.
That being said, to go back to my previous statement saying it does have double the content to a fault. It can be quite overwhelming having to micromanage so many various things. But if you don't try and semi-speedrun thought the content, and just take it as it comes, making small bits of progress, enjoying your time immersed in this world, it can be quite enjoyable. Just don't try and make use of all the content at once and everything should be fine. Pick something at first to focus on, farming, mining, heck even combat and once you feel comfortable enough move forward with something else and eventually all the gears click and turn in unison.
