You can make totems to allow you to grow any crops on any of your farms, so I just grow them all on my Sun Haven farm, and have all the different zone crafting tables in different sheds.
You can also have any of the animals on any of the farms with no problems.
I do probably 90% of my farming in Sun Haven, but I do have some crops growing in NV because of the extra bonus stuff you get in the little alcoves.
No, you do not have to farm all three, it is a personal preference.
If you do farm all three you can do it at different times so it isn't overwhelming or too much to keep track of.
It has a wonderful story line, great characters that you can choose to romance/date, gorgeous areas, seasonal bosses that you can turn on or off, you get to mine ore to upgrade your tools/weapons, and much more to find out once you play it :)
You can decide how you want to go about the game though when you get it, it's tons of fun I highly recommend it! It's like Stardew Valley with more options ^_^
Each little town has its own individual farm land with different crops! The Devs also included fast ways to get to each area so you don't have to sprint there every time.
Edit: Yes you can travel between them, first by a moderate walk and some quest requirements, later by fast travel.
But yes completely different characters in each individual town. Forest like areas surround each town so they are a good walk apart, each town gets their own map if that helps explain how separated they are. Aside from the main quest each area survives on its own with completely different vibes.
I do recommend getting the game though, tons of fun. If you enjoy farming, character development/relationships, mining, exploration, foraging, and tiny quests for people there's no way you won't like this game <3
