I just got a town quest requesting 'Earth Fertilizer I'
I've checked google about this and the only thing I can find that comes up in a brief mention is that it's craftable at a crafting table. Though when I check the recipe list, 'Earth Fertilizer I' doesn't come up. I have well more than enough crystals, so it not appearing due to lack of materials should not exist.

Anyone know what I am missing per chance?

I think it's not actually crafted at the crafting table; you need to create a Grinder and then check the crafting recipes there. (I think you can also buy some in town, maybe at the herb shop?)

Yeah, the fertilizer was in the Farming shop. Glad to have found it. Yet the recipe list never updated for some reason. Not sure if I need to build a bigger farm house to get more recipe, but I do have all of the other buildings, so I would find it strange I don't have a way to make earth fertilizer I and II.

Super strange! Maybe a bug? And you're definitely checking the Grinder, not the Crafting Table? How tricky!

It shouldn't be about the house size; I have two levels each of three different elemental recipes for fertiliser when I check my Grinder, and I only have the basic house :/ No other buildings at all. The only thing I had done was a quest from Catherine about growing some peppers, and a bit of unlocking mine levels.

Hopefully it does show up for you at some point at least

The only thing I can think of is that maybe your farming isn't high enough level yet? It's in the grinder (Where you would make flour, or animal feed). I hope you're able to find it!

I'm pretty sure you craft it from earth crystals with the grinder.

earth, fire, and water fertilizer 1 and 2 can be made in the composter. composter is crafted with sand(from killing mobs on the beach) planks and stone. earth fertilizer specifically, requires earth crystals which can be found in the eastern forest by your farm
