What are the differences between them?

I am confused besides the changeDante and Raidou, what else changes?

Access to the additional dungeon Labyrinth of Amala and having to fight the Fiends.

This pretty much answers you but the more concise answer is:

New game- 2002 release in Japan
New game: Maniax - 2003 Re-release in Japan/American, European version that had Dante in it
New game: Chronicles - 2004 Re-re-release in Japan/America (Europe?) version that has Raidou in it.

Maniax and Chronicles are basically the same, bar the character featured in it. You want one of those two if you want the infamous I CHALLENGE YOU TO A DUEL and other things.

I played the one on PS2 with Dante, might as well play this one with Raidou ^^

Also, a certain boss in Chronicle has a Full Heal skilled that he does once during its fight, that he doesn't in Maniax.

odd, since on the ps4 version you dont have that choice, you get chronicles by default
