How many digging buddies do you have in the village?
Are you digging in the proper spots in the correct biomes? You want to aim for the actual muddy spots in the biomes to get the most clay; you can't just dig randomly anywhere on the ground in the correct biomes.
With a digging buddy, a total of three digging-assigned villagers, and digging in the right spots, I had the 200 clay in a couple of hours.
Oh, and if you don't wanna deal with the holes, they'll close up on their own after 72 hours. Or you can go into Furniture mode and place objects over them to make a bunch close up quickly and then pick the object back up again.
Your character will automatically move towards the next spot.
Also, I've rearranged the trees in the Glade of Trust to have a long stretch of land bare so I can easily dig straight ahead until my energy is depleted.
Bring plenty of cherries, lemons or cacao beans to keep your energy up and you'll have 200+ clay within the hour!
I think I got all 200 in that much time digging with level 10 friend. It seems really unlucky
Trick with the holes.
1. Go into furniture mode
2. Choose a bigger footprint item like a bed.
3. Place bed over holes to get rid of them
4. Move bed to next set of holes.
5 . lather, rinse, repeat..
6. Make sure you leave the bed placed when done and you exit furniture mode.
7. Re-Enter furniture mode and remove the bed.
#6 is very important as if you remove the bed before exiting furniture mode then the holes reappear.
Some people use bigger items like houses in stead of a bed but that seemed like more hassle to me.
