Moonstones are used for premium cosmetics and for the Starpath, maybe that's what you meant. You can completely ignore Starpath though should you choose to.
other than the 2 bundles, which are also in the shop and have very simple quests for specific characters nothing special
nothing today needs you to buy anything outside your original purchase, however you will miss out on expansions and items and skins for characters.
to be fair you can enjoy this game without paying its possible and all, but you just cant pay attention to shop or anything like that
Moonstones are only for cosmetic items and the star path if you want to mess with those features. They are not required for gameplay and the other two in-game currencies are not tied whatsoever to them. Think of OG Overwatch before it was ruined by activation-blizzard with the so called sequel and while yes it was disgustingly a loot-box, it was all cosmetic.

I understand from some friends who played in EA that things felt very gated. I was asking for myself since most everyone I know no longer plays this game.

Edit to add: The tasks and various achievement things also contributed, but considering the amount needed was in the thousands for each new biome, it feels slow.
However, the moonstones you get for buying the game are enough to unlock the premium star path right out the gate, and they give so many away for free, you don't ever have to worry about not having enough to unlock the star path. Unless you spend them all on cosmetics...
