Pirahna bug?
I've been able to catch them without issue until I need them for the Gaston quest. Suddenly it's only white ripples and the two blue ones I got were the same fish as the white ones!

Is this just me? I've been trying for a couple of hours and it's really weird. lol

I crafted the fishing bait for that to get them. But yeah, it did seem the gold ripples disappeared when piranha were needed for a quest.

craft the fishing potion, the white ripples will turn into gold with it
