What should I do with the remaining event coins?

Do they transfer to the next event, or come back to me later?

Are the event coins gone after the event ends, or is there something they can be used to buy later?

Should I spend my remaining event coins buying more Moonstones / points?

Convert them back into moonstones, anyone who didn't covert their tokens from the last event just lost them when the new one started.
Moonstones are a currency which will stick around, event tokens do not.

Only if you have spent moonstones to buy event tokens you will be able to convert them back with a loss of 10%. If you play the event and do all duties you can buy exactly all 6 pages with rewards without losing efficiency.

I paid for the premium path but I also did all the duties it gave me, every single one.

Yes you have to buy all the pages of rewards before it will unlock the final page with just the Moonstones on it. That's how they set it up for some reason.

After you have bought every prize, you get the last page with just Moonstones.Then you can buy as many as you have star coins for. It is 10 star coins for 90 Moonstones on that page.
