You can dig new spots in places of the previous one to plant again the right seeds.
Not possible. Not for me, at least. I've got the same bug.
try placing it as close as you can where it lets you. I had to redig a spot myself because I clicked on the wrong seed by accident, and I could dig it again and finish the quest just fine, but it was a bit tricky to find the right spot that allowed me to dig at first. Hopefully at some point you will be able to dig again and finish it :)
It is finicky but it can be done. I did it when I accidentally planted a Red Pepper instead of a tomato. Waited, harvested the red pepper and dug a new hole at the base of the statue.
