Mostly the same as you except I did harvesting for Merlin since a wizard would gather ingredients for potions, digging for Maui because I dug a hole to bury an eel for coconuts in his quest, and mining for Kristoff because he mines ice.

Mine are extremely random. It took awhile before I realized I might want to track and add skills in a thoughtful manner. The only ones I pay attention to are Minnie and Donald who ended up with mining. I did give Goofy, Maui/Moana with fishing...by the time I got to the last two I had figured out maybe I should try to relate the characters to the role.

I wish we could reset the roles now that I know better.

Mine are:
Digging: Moana and Remy
Fishing: Maui and Goofy
Foraging: Donald, Scrooge and Mother Gothel
Gardening: Minnie, Mickey, Elsa, Prince Eric and Wall-E
Mining: Kristoff, Anna and Merlin
Which leaves the two you can't assign to a profession: Ursula and Ariel

Mickey was my first gardener and then I discovered that he is one of the NPCs that has a sleep schedule. So when I wanted to harvest in the evening, he was asleep. lol Live and Learn. Eventually I hope they give us the ability to reassign them as we see fit.

I don' have all the characters yet, but I did think about the roles a bit and came to some different combinations :D

Merlin - Gathering (seemed fitting for wizard or witch in their potion making and alchemy)
WALL-E - Mining (should have been Farming for sure after I got to know him better)
Remy - Gathering (seemed fitting for a rat looking for ingredients)
Mickey+Minnie - Farming (Minnie could have been a gatherer too since she likes picking flowers, though there is no way to get extra flowers with that profession as far as I know)
Goofy - Fishing
Donald - Fishing (since he's a Duck and wears a sailor outfit ^^)
Scrooge McDuck - Digging (since I see him as a Gold-digger 😄)
Kristoff - Mining (strong build for the job)
Mother Gother - Gathering (same reasoning as Merlin)

For me? I tried to stick with things that made sense for the character to me except for my Diggers, because I didn't know what to do with Merlin and after that I'd need a new Digging buddy after that.

Merlin- Digging
WALL-E- Gardening (obviously)
Moana and Maui both- Fishing (duh)
Remy- Gardening (duh?)
Eric- Digging (specifically I needed a new digging buddy after Anna)
Anna- Digging (also needed new digging buddy after Merlin)
Elsa- Mining (diamonds/rocks=ice)
Kristoff- Mining (he mines ice)
Gothel- Foraging (She leaves Rapunzel to go gather stuff for paints and soup)
Donald- Mining (I do not remember picking this AT ALL)
Goofy- Foraging (I mean Goofy fits with any of them, really)
Mickey- Gardening (because Minnie likes it)
Minnie- Foraging (picking flowers)
Scrooge- Mining (getting that gold!)

Kristoff was my first to bestie status followed by Gothel (stupid mushroom quest) then Elsa and Merlin.

I didn't think Maui and Moana were my only fishing buddies.

Goofy has fishing.
Scrooge has digging.
Remy has foraging.
Not sure who I want to have mine. I meant to have Scrooge do that, but accidentally set it as digging.

I tried to pick them according to everyones personality :)
