is there anything i can change in settings that makes it so that the moves are easier to pull off i cannot do these combos at mach speeds hitting everysingle stick movement, do they have a like easy mode?

Nope, no simplified inputs. Start small and just do basic combos. Nobody expects you to be doing optimal ♥♥♥♥ as a beginner. The important part is you knock your opponent down and gain an advantage.

Every character has a variation of something like a basic gatling (eg. slash -> heavy slash) into a special cancel to get a knockdown. That's 3 buttons with one motion input. Nothing complex.

What character do you play OP? I guarantee we can find you a combo that will do 80% of the damage for 20% of the effort and will be so simple your grandma can do it.

If doing combos, just keep it short. Anything else = people showing off and being a total nuisance because the more hits you connect, the less damage you get.

If doing special moves, just practice. You don't need to follow the motion 100% to pull off something.

Is there a particular combo or special move you're struggling with OP?

Without knowing any specifics and speaking from my experience, speed is almost never the issue when I'm struggling with a combo. You might have more time then you think. You might even be entering inputs too quickly, causing them to leave the buffer before it's actually time to cancel into the next input.
