Considering that in Strive all arcade mode endings are canon, that in the Japanese text she very clearly says she's a girl as well as there being multiple conversations about hiding something about yourself or not, that the lyrics of her theme song are very clearly about transition, that we had Testament come out as nonbinary before her, that there are subtle trans puns in a couple of her voicelines. Yup, she's clearly trans.
Way back then, when Bridget first debuted, one of the main things that made her interesting was precisely how she threw a lot of people off due to being girly but actually being male. In doing that she also made a lot of people uncomfortable at first, and forced a lot of people to think and open their minds about something they'd probably never think about. She's such a recognizable character even to people who don't play fighting games, or even Japanese games, because of that.
Looks like she successfully did it again :P
This retcon is almost as lazy as Disney handling what's canon in starwars.

Explain how all endings are canon. Were all of the endings in all previous games canon? How can contradicting endings both be canon?

Sorry to break it to you, but literally everywhere outside of the famously backwards and misogynistic gamer forums, in every serious gaming publication, in every game dev chatroom, and as you noticed, in social media as well, Bridget is trans, and her coming out is being talked about with high praise.
People are talking here about the Bridget "controversy". There simply is no controversy outside of "gamer" echo chambers.

Also, a retcon is when something is changed about a character's story retroactively. That's clearly not what's happening here. She definitely was raised as a girl due to her village's superstitions, and went to the world to prove her village's superstitions wrong by proving her masculinity and bringing fame and riches (good fortune) back to the village.
This didn't change, and her coming out wouldn't be nearly as insteresting and genuine without this backstory.
