Water / Ice shortage?
I've purchased water at every space station I've seen so far, I've been through at least 3 hyperjump gates to go to different 'star' systems.

So far I haven't encountered ice (there are some in distant systems according to radar).

I am constantly short on water, to the point that occasionally food doesn't get made. To the point where I'm reluctant to put down additional planters or relocate sections that already have oxygen inside because I'm fearful everyone will start to starve again.

It's at the point where that single particle collector is doing water non stop, and I look FORWARD to raids because the extra bodies add water to the ecosystem.

The game balance settings are the defaults / recommended.

An entry level particle collector that can only do gasses / water might help. More ice balls (like the rock balls) could help. I remember playing (a year or two?) a notably older version which had water planets, and that's when I'd previously got enough water to not care.

Is there some mechanic I might be missing or not doing right? Or is there just an absolute lack of water / ice everywhere?

Are you also recycling your biowaste into water?
When you do a deep scan on a system, run it again after you find something.

I had one asteroid field where I started with rocks. The first deep scan found copper. A second scan found ice.
No, I thought I had something good enough due to being able to 'Scan' for a target of 'Ice'. Completely forgot to go look at what else was later down the scan line since I started to try to focus on robotics.

I'm not sure if there's a tip or quest-line to scan for that; if there is I must have been struggling along just well enough for the tip to not trigger.

It seems that you've got a universe that generated a few regions without ice. This is unfortunate, but possible. You could use Radar to search for hyperjump relays in each region and quickly fly over to where there's ice, then stock up. Also most space stations should have water as well, plus as a last resort there's the Online Store.

One more thing, if you hang around in easy sectors, merchants will be poorer and will have less stock, and less valuable items. So venturing into hard regions is both dangerous and rewarding.

Could you submit an in-game bug report? I want to see what your universe is like. Also perhaps your ship was expanded too quickly?
I loaded one of the earlier save files to submit the report.

==========
I loaded this version of my save from about 30 play hours ago, which might have been from near the time I submitted the feedback report about water / ice issues. It looks like I'd reached the Deep Scan unlock point here, but this was still near 40 colonists crammed inside the ship, likely shortly before the water crash caused a huge mutiny which resulted in ~ 9 deaths due to traitor (there doesn't seem to be any way of winning them back?).

Deep scan unlocks with radar. Maybe a half hour in, definitely by the time you leave the second sector.
I don't recall being _that good_ but yeah, the 20th save file had it and I was still short on water until I setup a LOT of matter collectors.
