What you could do is set bandit camps at the start of the game to 5, which is maximum. Then you immediately build a logging camp, a second hitching post (buy a second ox immediately), a granary, a storehouse and 5 burgage plots in that order to get your free weapons shipment as fast as possible.
Once you have it, you immediately raise your militia (should be no more than 10 people at this point). Check the militia tab for options to hire mercenaries. Note where the currently available mercenaries are set to appear on the map.
Then march (don't run!) your militia towards the territory where the mercenaries you want are set to appear. Approach the bandit camp there until the bandits come out towards you. Wait until they are further away from their camp than they are from your troops, then set your troops to run and maneuver them around the bandits, avoiding contact and running straight to their camp to destroy and loot it.
Use the loot to put it into your personal treasury. Now hire the mercenaries and immediately tell them to attack the still pursuing bandits. Use your militia to draw the bandits towards the mercenaries. Crush the bandits with the mercenaries.
Now you have several troops of mercenaries all large and powerful enough to take on a bandit camp alone, so you can send your militia back home to disband them while you order your mercs to spread out and attack all remaining bandit camps. They will easily wipe the floor with the bandits and be able to loot all camps. You can freely decide whether to put the money in your treasury in order to remain able to hire mercenaries at will, or use it to bolster your regional economy and buy more oxen and backyard extensions for burgage plots.
Just kick back, relax, & learn everything without someone breathing down yer neck. My 1st 40-50 hrs were this mode.
Play the Rise to Prosperity scenario. None of its difficulty levels have bandits or raiders. It is for builders. (It is also harder because you cannot farm bandits for influence and cash. You have to actually earn them.)
If you want to play the other scenarios, you can turn off bandits and raiders using the list when you start, but what's the point. Those all are for battle fanbois and are designed to facilitate head knocking.
Is that nice enough?
Sometimes yer lucky & they spawn there at the start. Lets you dig a corpse pit well in advance. You will have 16 dead guys to bury.
Because you haven't. You start the game with 0 money in your personal treasury. You would need to build a manor right away and use a 100% tax for one month once it stands to transfer all your funds to your personal treasury. And that will give a BIG disapproval hit to your villagers, which is a big No-No at the beginning of the game.
So as far as I can tell, my suggestion is the safest bet to get rich fast at the beginning of the game. Without sacrificing any of your own people. Because 10 militiamen against 18 bandits will still lose people more often than not, even if standing their ground on top of a hill on their own home turf.
But seriously, heres 2 scenarios anyone can try. Save your game before trying either.

You have a bandit camp very near your border. You've just received your free weapons. Draft the 10 militia, march towards the camp until the bandits pop and begin marching towards you. Retreat back to your home turf and await the onslaught.
#2
Do exactly the same as #1, except this time run around with the bandits chasing you until you're able to finally get to their camp. Then use that money to purchase mercs. Then attack the bandits.
At the end of both scenarios, look to see which method has made you Richer.
