Why?
If they had prioritized more content/innovation, you would have cried about that "Why are they stacking more stuff on top of this buggy mess"!
And now when they instead focus on making what they already have run smoother rather than adding more works in progress, you complain about that.
Since the game is not due to be released for at least 18 - 24+ months from now. There is nothing to complain about. Game is in Early Development status and not even released yet.
Developer was nice enough to give people a chance to play test what he is working on in Early Access stable release with a bonus for steam game owners, access to the pre-release Beta play test versions. With feedback from EA stable and Pre-Release Open Beta play test versions, he has had to make several changes to some basic game features and game play. So that along with having to change Game Engine major versions, to maintain compatibility with other platform versions of the game, it has slowed his development timeline for adding the mid to late game features and gameplay. He has hired a small team to now work on several of those sections of the game, those features are now in early development..
The game is coming together just fine, and should be expected for full release in 18 - 24+ months from now. Be patient.

I so agree with you ! I switched to Foundation for the time being. It has become too frustrating to play hundred of hours and then hit so many bugs.
Yeah I now play max graphics on UE4 for Manor Lords because UE5 even with minimum graphics is unplayable...
