These make a big difference to the value of the Animal Deposit. There used to be a bug with the Trapping Perk that caused the hunters to wander aimlessly all over the map, but I think that's been fixed by now.
I would always keep the minimum herd size at 10, and never let your hunters deplete the herd below that, even though it will sometimes drop below that anyway. If it is ever depleted to zero you will lose the resource completely.
Hunting is less valuable as a food resource on maps where the development points are needed for other purposes. It needs those DPs to be really valuable,
