I never build such stupidly huge cities, because it is exponentially easier to supply a smaller town with food than it is to supply a huge city.
But the largest town I ever tried to supply with honey was 500+ pop, and that needed 24 apiaries (1 family each) around 2 dedicated "honey only!" granaries (fully staffed) to generate a decent surplus (~ 500+ honey in stock).
Due to spoilage, eggs do not generate large surplus amounts any more. They have become a purely supplemental food group. The more chicken coops you have, the faster you can generate surplus of major food groups, though... such as meat, veggies, apples and bread.
Chicken coops are solid, after the initial cost it is just automated.
Yes 1 egg a month but if you have 4 food sources, say Meet, fish and bread then you only need eggs on a quarter of your properties and you have a constant supply of your 4th food sources with zero maintenance needed.
So a population of 100, with 3 other food sources means you need 25 homes with eggs at a cost of 625 regional wealth for a 4th food sources.
The advantage is it then reduces quantities needed for the other food sources.
So take the above example before eggs you needed 33 meat (round down), with eggs you need 25. So you save 8 meat a month if I recall meat sells for 3 per unit and so per month you make an additional 24 regional wealth per month and this is true of the other 2 food sources so now you can potentially sell 72 worth of food to the market.
You have paid the egg costs back in 8 months. And all with very little input from you work force.
