You're not missing anything, but there are some more questions --
4. Do lambs grow into sheep? (I honestly do not know, but I can say that I've owned some lambs for a couple of years, and they have not aged.)
5. Do lambs give wool? (I do not think so, but I haven't tested carefully. Build a pasture, put a lamb in it and see if you get any wool.)
6. What do I do with all this wool? Build a weaver and make it into yarn, which counts as basic clothing for your level 2 and 3 burgages.

6. Yes. And yarn can also be turned into cloaks with dye at the Tailor, satisfying your tier 3 requirements.
In short, you can choose between going sheep -> wool -> yarn -> cloaks or flax -> linen -> clothes to satisfy your higher level clothing requirements, or do both, or focus on one to take to level 2 and the other to take to level 3.
Also worth noting that clothing is, in theory, consumed at a rate of 1 per year BUT, personally i've never seen any consumed. For example, if i make 50 shoes, then no more, i never run out of shoes. This might be related to a bug where clothing stays in the market despite being allocated to families and why sometimes the game doesn't stock more clothing in the market because it thinks there is enough there to satisfy new demand, when the clothing there is already allocated.
Good to know, I think it's broken too. Hope that will be fixed at some point. The whole ressource management system is slightly boring currently even on the hardest possible settings.
Back to the sheeps for instance, I would have expected to feed them with rye during winter... but no...
The sheep farm has 5 "pasture" slots where sheeps can be stored.
What is the yield per year for 5 sheeps ? 5 wools? Does this 5 slots work the same has an actual pasture?
The number of slots just means the capacity for the pasture. Too many sheep and supposedly the excess will die/run away.
Were these sheep you bought or sheep that were born in your pasture?
I only have sheep I have bought, and so far, out of an initial purchase of 5, none have become lambs.
But I didn't record when I bought them. I think it's been more than a year, but I cannot really say.
It would suck if sheep you bred did age while sheep you bought do not.
Born in the pasture. After about a year the lambs became sheep. Maybe it was longer, i wasn't really timing it.
Ok -- So I have a game with 5 little lambs that were bought about a year ago, and I shifted it up into 12x overdrive to see if they would ever grow up. This was in June, and in July of following year, they became sheep.
And this was without the sheep breeding perk.
So store-bought lambs will turn into sheep after about 2 years, and they will do so without the sheep-breeding perk.
Given that it takes 2 years, I'm not sure that the saving of buying lambs for 20 gold versus buying sheep for 30 is worth it.
Unless they give wool as lambs.
Which they most definitely do not do. I just tested that, too.
Yes, you don't need the sheepbreeding perk if you buy lambs. Personally, having experimented with it, i don't find the perk useful. You might as well just buy fully grown sheep so you can immediately start getting wool from them and producing stuff.
