To get weapons, you need artisans working from burgages with backyard extensions.
And there are some perks you need as well.
Blacksmith makes tools, sidearms, spears and polearms.
Armorer makes helmets and mail.
Build a bloomery near the mining pit. Put at least one family in there, too.
Ignore the smithy. It is only for making tools.
Level up one burgage plot with a backyard extension to level 2.
From the burgage plot menu, choose a new backyard extension. Level 2 burgage plots can have artisan workshops as backyard extensions. Choose a blacksmith's workshop.
WARNING: Building an artisan workshop in a burgage plot's backyard will permanently take one family out of your pool of unassigned families!
One the blacksmith's workshop is built, click on the burgage plot and click through the tabs in there until you see a selection of weapons or tools to craft. Click on the type of weapon you want to craft. This will order the blacksmith to only focus on crafting this type of weapon. The only troop type that only needs a weapon and not a shield is the polearm militia.
For shields, you also need a joiner's workshop. That is another level 2 burgage plot extension. You build it the same way as the blacksmith. Once built, you can order the joiner to build wooden parts, small shields or large shields.
For warbows, you also need a fletcher's workshop. Another level 2 burgage plot extension that will only build warbows, so you do not need to assign it any specific tasks. You should click on all these upgraded burgage plots to limit how many planks they can use for their job, though... otherwise you'll get a problem with your construction.
For armor, I advise you to ignore the development tree and simply import helmets, and later chainmail (when you have all your houses upgraded to level 3)
