Report a translation problem
I try to keep at least one family unassigned, and I try to have times when there is no construction so they can tend their gardens.
Current playthrough I have assigned 3 families, one each from 3 burgages with vegetable gardens, to the stone church. They have lots of time to work their gardens.

In this example, the outline of the burgage plot is represented with a clearly visible dotted line, but there is also a fainter dotted line separating the additional housing extension from the rest of the "backyard". Everything above (!) that dotted line will be usable to fill up with garden plots or apple trees. So this is a relatively efficient garden plot. If in your burgage plot the majority of space is reserved for housing and only a small pocket is actual backyard, your orchard or garden will be tiny.
Maybe that's what happened?
No point. Hunting is bugged in the current game. Deer will wander all over the map. It still works, just slower, since your hunters have to travel further.
A lot depends on how you set up your plots. As a rule of thumb, most of your plot area should be utilized, although as noted, with carrots they still need to plough. Trees appear as soon as you make an orchard though - they do take 5 years to become fully productive though.
I'd like to see screenshots of your plots (you did offer) so we can see what is going on.
Generally speaking, if you make a rectangular or square plot most of it should be filled, its only if you start doing strange shapes the amount of land used can go higher or lower than normal.

That backyard should net you at least 90 apples/veggies per year after 5-6 years of cultivation.
