Don't do it this way. Just have a least one unassigned family at all times to either build or go grab the ox freely.
Later you can assign a family to your stable and everything will work smoother, but early game (where OP is having trouble) he just wants logs in the pit, probably right now.
If he assigns the ox to the saw pit then it's only available to that building right?

Yeah, for me this is the game. I like problem solving and optimising. Some players might find this frustrating though.
I have an issue now where families in both of my logging camps are not cutting down trees and gathering logs. I have an Ox dedicated to each camp, 3 families in each, plenty of forrest, dedicated working area. With several in-game months passing, I am running low on logs and can't produce any fuel for my town.
I have this same issue with my hunting camp. 2 families in the camp, near a full wild animal area, but they will not hunt. I have dedicated the area for them to hunt in and they don't hunt. I am also running low on food because of this.
I have had similar issues with the forager hut.
I can't continue playing because I can't collect wood or food.
At this stage of the game I just switch families around to different jobs until I have spare families a little later. It's a fun part of the game actually.
I think I get into trouble because I can't afford to buy another ox and my build que is keeping the original ox busy delivering logs to projects.
I wish I could just ask the ox to deliver one log every month or so. Then if I have a long build que I can still make planks. That church and the Manor are depending on it. But my population is growing too.
What part are you struggling with? Lets unpack this.
