Should I wait for 100% growth on the field or should I harvest when it says it has reached the maximum yield?
Title. The game says the crops are still growing, but it also says it already reached the limit of yield with TAB pressed.

If you are in september, better to harvest now.

But what is the problem of harvesting before full growth if the yield will be the same? Or is it not the same?

I harvest in July on a March crop. I've noticed higher yields early harvesting before the actual Harvest season begins and less chance of lost crops to plowing. I then fallow them to replenish them for another March sowing. If i catch them sowing for winter, I burn them.

I could be wrong but my understanding is, there shouldnt really be 100% unless you found the perfect Plot thats green to reach 100%

I have a Morgan of 2.2 and half of it is green and the other is Yellow, if i Farm that year its highest % is 48%, next year if i decide to farm again it will lower to 28%
but If i leave it farrow for the year then it will go back up to 48% for the next year, but never past it
Thats what im seeing it least idk if that helps

Usually there isn't enough time for a full harvest if you wait for 100% growth.
This is where having several tiny fields instead of a large one could come in handy.

However I haven't seen a sizeable downside to just let the crops persist through winter and the use "force harvest" on march. When harvest is done, I just set the field to fallow. Then wait a year for plowing and planting the next batch.

Of course you shouldn't do this if you really need to feed the people urgently, or if you want a continuos cycle of crops, but hey, works for me.

I usually plow in Marsh (if i didn't finish plowing in oct/nov). And i harvest everything between june and september (When there is no rain !). I try to force harvest the fields who are at 100% first. Like Scaristotle say, it's better to harvest when farmers don't have multiple tasks to do, it's a safe guard to avoid seeing them messing things up.

I never tried to let the crop going through the winter like cachmandrake suggest.

The fully grown plants eat fertility so harvesting and force fallowing is useful for preserving soil quality
