Edit: I was assuming when you said "coats" you wanted clothes. I think gambeson is what is default produced which uses different materials maybe, so they'd produce nothing if you didn't have any of that?
For cloths you need different items, see here;
- Cloaks: obtained from Dyes and Yarn at Tailor's Workshop backyard extension
- * Clothes: obtained from Dyes and Linen * at Tailor's Workshop backyard extension
- Gambesons: obtained from Linen at Tailor's Workshop backyard extension
If you want just cloths, you'll need Linen.
- Linen: obtained from Flax at Weaver Workshop
Have you tried exit/reload the game? Sometimes that seems to reset wonky buildings for some. Not sure. it worked for me the time I tried it, but since then I've only bothered with goat farms and shoes
I know it sounds stupid but try importing a coat from the trader. I think its a bug, this happens with gambeson armour as well, as soon as I import single unit the tailor gets to work.
