As for giving priority to production houses instead of the market for raw materials, I don't know if there is a way. I haven't found one. I would also like for this to be an option in the future.
When in combat you can hold tab and mouse over your units and it has the stats (incl. Armour, charge, armour-piercing). The armour of the retinue guys is so high. I haven't lost a single one in combat, though that's against bandits. And the retinue outpowers the bandits so much that they get something like a +40 army power balance modifier.
BTW, anyone able to increase the value of the pierce on their units. Maybe it's called amour breaking or something similar. Just trying to make elite troops right now.
Pikes have this stat.
Thanks. I found Hooded Horse have made a wiki which has all the answers I was looking for on the stats of different weapons and armour.

I hope this helps you all.
