stick another family into storehouse that doesn't need to work a market stall. however there will be nothing stopping them from opening up a market stool of their own if the town needs them too.
(which will lead to further micro-managing)
OR
create another storehouse that just focuses on collecting the wool & hides so that it prioritises focusing on supping your industry's raw materials rather than trying to supply both your peasants & supply chains.
that way your peasants will be less likely to open up a market stall from that storehouse as there are no "market goods" stored in the storehouse.

Two questions;
1- How many people do you have in your village so far? 50, 100, 200? 1000?
2- How many families do you have in your storehouse assigned?
3- How many storehouse do you have?
I have around 230 people and 2 large storehouse + 8 families assigned. My two storehouse are also located in the middle of my village. The market place is also located next to my 2 storehouses for conveniency.
Each family has 1 market stall meaning, 1 person per family = 8
Meaning, I have 16 members left who are transporting. ( if they are not sick ) if sick you need herbs to heal faster. If you have no herbs = GG. lol
Bear in mid that each member will haul everything around the map. Meaning, if you have houses all over the place super far away from your storehouse, they will eventually take all the time to get from point A to point B.... meaning, 1 member is wasting precious time to haul bcz of bad localisation of your housing.
Oxen "does not" deliver hides or wool. Storehouse families does. So your oxen has no relevancy in your issue.
Oxen only haul logs or gather crops during season. Nothing else, nothing more.
The two main factors why you don't get hides or wool is;
A) Distance between storehouse and burgage plot ( where you get hide from goats ).
B) Distance between Storehouse, Sheepfarm ( wool ) and Weaver Building. ( stack them them close to each other )
B) Amount of storehouse and families assigned to them ( 1 is surely not enough, trust me ) C) The distance between your storehouse and your tanning hide, Weaver buildings.
Once you fix that, you should be ok. I put all those facilities in the middle and all my burgage plot around them all. Zero issue so far.
No. He hasn't produced anything to open a stall with, which is why I can't level up.
You can do that? Cool. Okay so basically I set up one of my storehouses for all the "finished" goods like charcoal, leather, eggs etc. and one for the raw products like lumber, hides, wool etc.? I'll give that a try and hope that works.
Oh maybe I misunderstood logistics then. So the industrial buildings get raw materials themselves from where they are produced? I though the logistics guys from storage etc. pick up the stuff and either provide the industry with it or store it and then bring it to each building. I didn't know that the miller, tanner etc. pick up stuff on their own. Okay that makes alot more sense then.
I have around 60 families and two storeshouses which are fully staffed. The storehouses, market, church are basically the centre of my town and the houses are in a square around them.
I thought the oxen were used by whoever needed them to deliver all kinds of goods around town. So what do I need oxen for then? I have ten hitching posts which are mainly fully staffed.
My tanner and weaver are right across from the storehouse. The weaver is right next to the sheep pen and farm as well. I have played settlers in the past so I know how to set up an efficient transport network by grouping buildings that depend on each other right next to each other, which is why I also have my mill next to my farmhouse, next to my bakery.
yeah! click your storehouse and go to the advanced tab.
you'll then be able to "tick" or "untick" which good the storehouse OR granary accepts!
