Villagers not harvesting crops
There will be times where my villagers will either not harvest the whole crop that is fully grown when it turns october and will pretend it isn't there or just tear up the crop and I can't use it. Any solution?

How big are your fields?

I set up multiple fields per crop that are no bigger than 2 morgen each and then make sure to limit the area of work per farm as well. Got no problem getting my crops at harvest time this way. By doing so I have multiple farms looking after specific crops.

The issue is that they're just not harvesting while it's still fall.

And you have fully staffed farm, right? And did you set the work area?

Just wait till you get to harvest everything and put it in your farmhouse pantry... then plough the fields and sow them so they are in a growth cycle over the winter.... and have to do it all again in the spring because it resets and you loose absolutely everything, even though you have 4 oxen working in 4 farms with 3 people each farm at 0.6 acres per plot over 3 plots and 14 oxen in stables with 8 workers in said stables doing bugger all for the last 4 years! That one will really piss you off!

If your workers aren’t harvesting during fall then tick the “force early harvest box” it usually works for me

I sounds as though you are leaving your harvest too late, or simply not placing enough people on the task,

Harvesting takes place in September NOT October. October is the ploughing season for next years crop fields. So, you need to have harvested all of your crops before the beginning of October.

September: Make sure all of your Farms are fully staffed taking people out of their normal assignments if necessary. I usually re-assign all of my Forage Hut workers to my farms and make up the difference by reassigning Trade Depot workers and Warehouse Staff. Make sure all of the crops are in before the end of the month. If you still don't have enough workers to clear the field them build more farm houses to increase the workforce.

October: The crop rotation system will switch your field assignments automatically to the selection you made for next years crop. Any unharvested crops will be lost and your workforce will begin the task of ploughing the fields selected for next years harvest. Unless you are relying in manual ploughing and assuming that you have opted for the Heavy Ploughing Development Perk you can unassign all your farmers and instead assign Oxen to your farms to do the heavy ploughing.

November: Sowing season. You now need to reassign all your workers to your Farmhouses again to sow your ploughed fields with next years crop. Remember to unassign your Oxen from the farmhouses. They cannot help with sowing and may be needed elsewhere. Check your fields until everyone confirmed that it has been fully sown and that the crops are growing before unassigning your farmers.

This is excellent. I would only add that if you have grown emmer or rye, after sowing is done, you need to leave some people in the farm house to thresh the harvested wheat, which the windmill cannot use, into grain, which the windmill can use.

True! Except that in my experience they don't do that even if you increase the Threshing Priority to 100%. Instead they waste their time wandering around hand ploughing. So, usually I don't worry about threshing until after the fields are ploughed. That way they have no distractions.
