Goat sheds and chicken coops will produce the same and at the same rate no matter how big the backyard plot is!
My tip would be to build some separate housing with a big backyard out of town and treat it as a farm, so don’t try to fit a massive orchard in the middle of your village centre.
Also, if you have massive orchard and vegetable patches, I’d recommend to build a dedicated granary and limit the number of items it can hold (in the advance tab) to just veggies and apples, so a granary worker with a cart will always be taking goods away from the houses’ pantry and they can keep picking more. Otherwise if their internal pantry is full (it holds 37 items) your villagers will stop picking apples/veggies until there is free space for them to do so.
