Rich deposit
I had a rich iron ore deposit, but completely mined it before i had the deep mine tech. now i cant use it on the iron mine as there is no rich deposit. i guess you should not empty the mine before you upgrade?

Interesting.
I haven't got to that yet but already started on rocks.

I've been playing on gamepass and I can't even see iron deposits. There's just an icon where the iron is supposed to be.

Well, the deposits disappear if they fall to 0. So yes, if you want to upgrade to/use deepmine, the deposit has to exist, so it has to have more than 0 >.>

With DeepMine, the deposit will still hit 0, but it does not disappear and your mine workers will keep working/gaining resource from it.

If you select the Mining Pit Building you can see where to place it.

I think copper and Iron are the only ones (so far) with an actual mine for it. Stone looks like it's just a surface deposit. I could be wrong, so give it a shot if the deposit is rich.
