Assigning families in the church and the trading factory

Does anyone knows what happens when families are assigned to work in the church and the trading factory?

I understand that the trading factory needs at least one family to trade, what happens if more families are assigned to it?

Church become gravediggers according to the tooltip, but it's mostly useless because you can assign to do the same on the graveyard.
Trading - I don't know, but it does perhaps increase the frequency of trading goods without routes and they create shops as well (although I really dislike that) on top of gathering the supplies faster for trade from the production/storage..
