How to kill sheep for meats?

I can get wool, but I don;t see an option to make them into food, is that in game get?

no, you can only sell them and use the coins for buying meat.
You also get leather from goats, but no meat (poor goats)

I planned on breeding my initial 5 sheep into a mighty herd, and now, years later, I am stuck with many hundreds of sheep running amok and completely crashed the livestock market. Can't trade them away, I have thousands and thousands of wool and yarn piling up, also crashed those markets and can't trade them away fast enough.

How do I get more meat then? Can they eat horses, it was a very common meat back then.

Well that's not a great way to get meat when there are literally hundreds of sheep

I've heard it's best in stews but I've only ever eaten lamb, not mutton from an adult sheep.

You're not "spoiled" at all, it's completely sensible that you'd expect to be able to raise livestock for meat since that's something people have been doing for as long as people have been raising livestock.

I'm sure it's on the way, though.
