Ox are for moving logs, aka "Timber", plowing farm fields and transport farms cargo (only with the improvement).
Horses are for trading.
Mules are for transport goods between your cities.
None of them can perform any other activity, just because.
trial and error....
just like banished.... its ok to make mistakes and redo all over again...
its just a game.
obviously the devs have considered this but then it would make the game too easy....
