Firewood for example if you have 20 houses built you can only have 20 firewood in all of your marketplaces added together total. You could have 30 firewood stalls but your market will never have more then 20 firewood in it. You'll likely eventually be in a position where one stall has 15 a few have 1 and the rest are empty and wont fill whether you're people are idle or not.
A temporary solution I've found is to delete and market stalls that are full, or have substantially more of an item then other stalls. This seems counter intuitive but will allow your other stalls to begin stocking product again. I also started limiting the size of my markets to reduce unproductive stalls.
Hope this helps someone :)
